Five Courses, Five Festivals—One Epic Night Hosted by Dynamite MC at The Collab. in Walthamstow 

Calling all festival fanatics, wine lovers, and foodies - The Collab., Walthamstow's hottest independent eatery, is throwing a night you won't forget. On Wednesday 6th November, step into "The Famous Festival Five" wine dinner— an experience where the world’s most legendary music festivals inspire every bite and sip.

Living up to its name, The Collab. is teaming up with the legendary Dynamite MC, aka Mercury Prize winning rapper-turned-sommelier Dom the Somm, (formerly of two Michelin starred The Clove Club) Dom the Somm, to host this extraordinary event. He'll be your guide for the evening, dropping stories and insights as you journey through each course and its perfect wine pairing.

What's on the Menu?

Head Chef Paul Human has crafted a five-course menu that's as eclectic and vibrant as the festivals themselves. Each dish captures the essence of an iconic music festival, expertly paired with wines handpicked by Dynamite MC. Get ready for a harmonious blend of flavours that'll take your palate on tour.

Course 1: Reading & Leeds Festival

Start the night with a nod to the UK's legendary Reading & Leeds Festival, famous for electrifying performances and iconic moments. Dive into crispy, golden-fried chicken brined in buttermilk—comfort food with a rockstar twist. It's served with a historic Reading Sauce, and a zesty house-made fermented chilli butter hot sauce that'll set the stage on fire. Pair it with the sparkling vibes of Everflyht Brut NV, England’s finest bubbly that captures the festival's high-energy atmosphere.

Course 2: Fuji Rock

Next, we're jetting off to Japan's Fuji Rock Festival, nestled in the serene mountains and known for its blend of nature and music. Savour delicate salmon sashimi drizzled with vibrant yuzu dressing and topped with caviar—it’s freshness and luxury in perfect harmony. This dish is paired with the elegant Grace Private Reserve Koshu 2021, a refined wine made from Japan's Indigenous Koshu grape, embodying the festival's fusion of tradition and modernity.

Course 3: Rhythm & Vines

Fly down to New Zealand for Rhythm & Vines, the first festival in the world to welcome the new year. Enjoy succulent lamb lollipops glazed with traditional NZ mint sauce alongside the classic Kiwi snack of creamy onion dip with chips. This course grooves with the bold Elephant Hill Pinot Noir 2020 from Hawke's Bay, a wine that's as vibrant and laid-back as the festival itself.

Course 4: Burning Man

Feel the transformative vibes of Burning Man, the iconic gathering in Nevada's Black Rock Desert that's all about art, self-expression, and community. Indulge in smoked short rib that raises the heat, served with refried black beans, charred corn pico de gallo, ancho queso, and warm corn tortillas. This hearty feast is paired with the robust Bakestone Cellars Cabernet Sauvignon 2018, offering deep flavours that mirror the festival's profound experiences.

Course 5: Glastonbury

Bring it back home to the UK's own Glastonbury Festival, renowned for its eclectic mix of music, art and those unforgettable muddy fields. Dessert is a delectable Somerset apple burnt cheesecake—a playful twist on classic British flavours that'll have you reminiscing. It's paired with East London urban winery Renegade’s ‘Esi’ Rosé, crafted from grapes grown under a tent: the perfect happy campers to conclude the lineup!
